Two-Mushroom Stuffing
Customize our so-easy side with your favorite 'shrooms
14 slices white sandwich bread, toasted
8 Tbs.butter
1 onion, chopped
4 ribs celery, chopped
1 (8 oz.) pkg. mushrooms, sliced or quartered
1 portobello mushroom, trimmed, gills removed, chopped
½ tsp. poultry seasoning
½ tsp. salt
¼ tsp. pepper
1 (14.5 oz.) can low-sodium chicken broth
¼ cup chopped fresh parsley
Cut bread into 1" squares. In large skillet, melt 7 Tbs. butter over medium-high heat. Add onion; cook, stirring, 3 min. Add celery; cook 4 min. Add mushrooms, seasoning, salt, pepper. Cook, stirring, until mushrooms are tender, 5 min.
Stir in bread, broth and parsley. Transfer to 1½-qt. baking dish. Cut remaining 1 Tbs. butter into small pieces; sprinkle over stuffing. Bake until browned and heated through, 30–35 min.
