Savoury pancakes

Top these tasty morsels with anything you fancy - they're great for brunch or dinner.

SERVES 2 PREP 5 MINS COOK 10 MINS

For the pancakes:

* 90g plain flour

* ½tsp baking powder

* 1 medium free-range egg

* 100ml skimmed milk

* Spray oil

For the topping:

* 2 bacon medallions

* 100g chestnut mushrooms, sliced

* 175g cherry tomatoes, halved

* 1-2tbsp shredded basil

* 2 medium free-range eggs

1 Put the flour, baking powder and a pinch of salt into a bowl. Mix the egg for the pancakes with the milk. Gradually whisk into the flour to form a smooth batter.

2 Heat a nonstick frying pan over a medium heat and spray with oil. Drop 3-4tbsp of the mixture into the pan and spread to make a round about 7cm in diameter. Cook for 1-2 mins, flip and cook for a further 1-2 mins, until golden on both sides. Remove from the pan, and repeat with the remaining batter.
