PANERA BREAD BROCCOLI CHEDDAR SOUP

SERVES 4

4 Tbsp. unsalted butter

1 medium yellow onion, finely chopped

2 celery ribs, thinly sliced

¼ cup (30 g.) all-purpose flour

3 cups low-sodium chicken broth

Kosher salt

Freshly ground black pepper

1 large head of broccoli, finely chopped

1 large carrot, peeled, grated

2 cups whole milk

12 oz. cheddar, shredded (about 3 cups), plus more for serving

1. In a large pot over medium heat, melt butter. Add onion and celery and cook, stirring occasionally, until softened, about 7 minutes

2. Whisk in flour and cook, stirring frequently, until vegetables are coated, about 1 minute. Slowly stir in broth; season with salt and pepper.

3. Add in broccoli and carrot. Bring to a boil, then reduce heat to low. Simmer, stirring occasionally, until broccoli and carrot are tender, 8 to 12 minutes.

4. Slowly stir in milk and bring to a simmer. Stir in cheddar until melted and smooth; season with salt and pepper.

5. Divide soup among bowls and top with more cheddar.

1 medium yellow onion, finely chopped Vegetable oil, for frying (about 6 cups) 16 oz. frozen shoestring French fries, divided 6 oz. American cheese, cut into ½" pieces ⅓ cup whole milk

1. In a small bowl, whisk mayonnaise, ketchup, relish, vinegar, mustard, and ¼ tsp. salt; set animal sauce aside.
