1. APPLE CIDER VINAIGRETTE

Combine 3 Tbsp. extra-virgin olive oil, 2 Tbsp. apple cider, 2 tsp. Dijon mustard, and ¼ tsp. each salt and black pepper in a small screw-top jar. Cover and shake until well combined. Chill until ready to use (or up to 1 week). (Olive oil will solidify when chilled; let stand at room temperature about 30 minutes before serving.) Toss with salad greens.
