How to make limoncello

Thinly peel 4–5 unwaxed, organic* lemons, avoiding the pith. Place the peel in a sterilised glass jar with 3 cups vodka and steep for a week. Strain and add 1 cup simple sugar syrup. Store in a bottle in the fridge to serve icy cold – it will keep for months.

*It’s important to use organic fruit – the pesticides used in conventional fruit penetrate the skin and will seep into your drink.
