“DUBAI CHOCOLATE”, a sweet confection filled with filo pastry and pistachio-tahini cream, went viral in 2023 after a few enthusiastic reviews and aesthetic images on social media. Three years later, the dish is available around the world—in its original form as a bar, or in variations like cakes or milkshakes. It is safe to assume that the popularity of the dish globally may have raised demand for its basic ingredients: chocolate, pistachio and sesame. But how does this sudden surge impact agricultural systems? This is the question food and climate researcher Alisha Butala aims to answer with Future Thali, an interactive digital tool that reveals the hidden carbon and water footprint of a meal.
