The seasons of change are being thrust upon us once again. I am aboard Uzbekistan’s Afrosiyob train that is taking me from the leaf-laden streets of its modern capital city of Tashkent to the jewel of the Silk Road, Samarkand. Hurtling along at 210km per hour, we zip by seemingly endless, undulating hills of formerly lush grasslands that are now tinged with a distinctive brown. In a few weeks, the shade will change again to a crisp-white with the onset of winter snows.
As nature flaunts its new style, it signals a change in our adventures too. Many will swap the swimsuit for skis, the seaside for the slopes and to inspire you this month, we explore the destinations that take you from the beach to the piste, and everywhere in between.

From the shadow of the Catalan Pyrenees to the golden sands of Tarragona, I am introducing my palate to dishes and tastes that have been cultivated for over a millennia.
