ONE-DISH chicken winners

Marry me’ chicken

Win someone over with this fashionable creamy chicken dish.

SERVES 4 PREP 10 mins COOK 15 mins

* 4 skin-on chicken breasts

* 2tbsp olive oil

* 3 garlic cloves, chopped

* ½tbsp each fresh thyme and oregano, finely chopped

* 1tsp paprika

* 200ml chicken stock

* 150ml double cream

* 1tbsp chopped sun-dried tomatoes, drained

* 50g Parmesan, grated

* Handful basil leaves, to garnish

* Leafy salad, bread or potatoes, to serve (optional)

Heat the oven to 200C Fan/Gas 7. Season the chicken on both sides. In a medium ovenproof pan, heat 1tbsp oil. Brown the chicken, skin-side down, over a medium heat. Remove from the pan and set aside.

In the same pan, add 1tbsp oil and fry the garlic for 1 min. Add the thyme, oregano and paprika, and fry for 2 mins.

Stir in the stock, cream, sun-dried tomatoes and Parmesan, and season. Bring to a simmer, then return the chicken to the pan.

Bake for 10-15 mins, until the chicken is cooked through. Garnish with basil. Serve a breast per person with salad, bread, or potatoes if desired.
