Almost effortless make-ahead chilled desserts

No-bake DELIGHTS

Tiramisu fridge cake

All the flavours of the classic Italian dessert made in a handy loaf tin!

SERVES 8

READY IN 15 mins, plus 4-6 hrs chilling

* 150g shortbread biscuits

* 40ml espresso coffee

* 1tbsp Amaretto liqueur

* 3tbsp caster sugar

* 8-10 amaretti biscuits

* 250g mascarpone

* 1tsp vanilla extract

* 250ml double cream

* 150g cream cheese

* Cocoa powder for dusting

YOU WILL NEED

* 1lb loaf tin, lined with cling film overhanging each edge

1 Crumble the shortbread over the base of the tin to cover. Put the coffee in a shallow dish with the Amaretto and 1tbsp caster sugar. Add the amaretti biscuits and set aside to soak.

2 In a bowl, beat the mascarpone to loosen with the vanilla and remaining 2tbsp caster sugar. Add the cream and cream cheese, and continue to beat until soft and billowy.
