Chicken livers and potatoes An old-school favourite gets a modern flavour makeover.

SERVES 1 PREP 5 mins, plus soaking

COOK 30 mins

125g chicken livers, sinew removed

50ml milk

2tbsp oil

1 onion, thinly sliced

170g new potatoes, cut into

5mm-thick rounds

2 garlic cloves, crushed

2tbsp flour, seasoned

20g butter

1tbsp balsamic vinegar

Small bunch parsley, finely chopped

1 Soak the chicken livers in the milk for 30 mins.

2 Heat the oil in a frying pan over medium heat. Fry the onion and potatoes, stirring occasionally, for 20 mins, until tender and golden. Season and add the garlic, fry for 2 mins, then move the potato and onions to a plate.

3 Toss the livers in the flour and shake off the excess. Add the butter to the pan and, once foaming, fry the liver for 2-3 mins on each side, until well browned.

4 Return the onion and potato to the pan and add the balsamic vinegar. Mix together and allow the glaze to thicken slightly. Serve with parsley.

1tbsp oil

½ onion, diced

1 celery stick, diced

1 garlic clove, crushed

1tsp dried oregano

¼tsp chilli flakes

1tbsp tomato puree

227g tin chopped tomatoes

1tsp bouillon stock, dissolved with 250ml

boiling water

1tbsp red wine vinegar

170g butternut squash, peeled and cubed

215g tin butter beans, rinsed and drained

Handful spinach

Zest and juice ½ lemon
