Brain-boost granola

Filled with healthy fats and soluble fibre to help lower cholesterol and keep the brain healthy.

MAKES 480g (6 servings)

PREP 5 mins

COOK 30 mins

* 200g oats

* 100g walnuts, roughly chopped

* 50g 4-seed mix

* 50g chia seeds

* 50g flaxseeds

* 50g dried berries, such as sultanas or cranberries

* ¼tsp cinnamon

* ¼tsp ground ginger

* 50ml olive oil

* 60g honey

* 1tsp vanilla essence

* 1 medium egg white, beaten

1 Heat the oven to 150C Fan/ Gas 3½. Put all the ingredients in a mixing bowl with a pinch of salt and stir well so the oats are evenly coated.

2 Spread evenly over a large lined baking tray. Bake for 30 mins, turning halfway. Cool on the tray. Store in an airtight container for up to 1 month.

COOK'S TIP

Simply serve with milk, or for an added gut benefit, top with yogurt.
