All hail the li'l green freezer staple that's cheap, versatile and good for you!

PEA PESTO PASTA

SERVES 4 PREP 10 MINS COOK 15 MINS

• 400g orecchiette

• 1 cup frozen peas, thawed

• 1/3 cup finely grated parmesan, plus shaved to serve

• 1/4 cup roasted pecans

• 1/4 cup olive oil

• 1/4 cup basil leaves, plus extra to serve

• 1 tbsp lemon juice

• 1 clove garlic

• 1 tbsp olive oil

• 2 chicken breasts, thinly sliced

• 1/2 cup semi-dried tomatoes

1 Cook pasta following packet instructions. Drain, reserving 1/4 cup of cooking water.

2 In a small food processor pulse peas, parmesan, pecans, olive oil, basil, lemon juice, and garlic until smooth. Season.

3 Heat oil in a large frying pan on medium. Cook chicken 2-3 mins, tossing, until cooked through. Toss through orecchiette, tomato strips, and pesto, adding a little reserved pasta water if needed to loosen. Top with shaved parmesan and basil.

• 1 cup self-raising flour

• 2 eggs

• 1/3 cup milk

• 1 cup frozen peas, plus extra 1/4 cup blanched to serve
