MASSAMAN SAUSAGE CURRY

SERVES 6

PREP + COOK 45 MINS

• 2 tbsp peanut oil

• 12 good quality beef or lamb sausages (1kg)

• 2 large onions (400g), cut into thin wedges

• 2/3 cup massaman curry paste

• 1 cup coconut milk

• 2 cups chicken stock

• 2 cinnamon sticks

• 3 medium potatoes (600g), peeled, chopped

• 2 tbsp brown sugar

• 1 tbsp fish sauce

• 1/3 cup coriander leaves

• 2 tbsp crispy fried shallots

• 2 tbsp unsalted peanuts, roasted

• steamed rice, roti (or naan), to serve

1 Heat half the oil in a large shallow frying pan. Cook the sausages over medium-high heat until browned all over but not cooked through. Remove sausages from the pan.

2 Reduce heat to medium. Add the onion. Cook, stirring, until softened but not coloured. Add the curry paste. Cook, stirring, for 1 min or until fragrant. Add the coconut milk, stock, cinnamon, potato and sausages to the pan and bring mixture to the boil. Simmer, covered, for 30 mins or until the potatoes are tender.
