BISCUIT TIN DELIGHTS

Custard Creams

Great as they are, these can also be easily jazzed up with fancy flavours.

YOU WILL NEED

For the biscuits:

  • 100g unsalted butter, softened

  • 100g caster sugar

  • 1 medium egg yolk

  • ½ tsp vanilla extract

  • 175g plain flour

  • 30g custard powder

For the filling:

  • 50g unsalted butter

  • 100g icing sugar, sifted

  • 1 tbsp custard powder, sifted

  • 1 tsp boiling water

HOW TO DO IT

1 For the biscuits, beat the butter and sugar with an electric mixer until light and fluffy. Add the egg yolk and vanilla and beat again. Sift over the flour and custard powder, then mix on low speed until the dough comes together. Shape into a ball, then roll out between 2 sheets of baking paper to 5mm thickness. Slide on to a tray and chill for 30 mins.
