Michelin-starred Thai fare at Grand Hyatt Manila

Grand Hyatt Manila had a culinary collaboration with Michelin-starred Napol “Chef Joe” Jantraget of Bangkok’s acclaimed restaurants Nawa, Kwann, and Samlor.
Chef Joe took over The Peak, bringing his signature modern Thai cuisine to the heart of Manila for a limited four-night engagement.
Grand Hyatt is reviving its practice of bringing more Michelin-starred chefs to cook in its kitchens. The last time the hotel did this was two years ago with Rishi Naleendra of Cloudstreet, Singapore.
Thai Chef Joe is known for his bold and modern interpretations of traditional Thai cuisine. He began his culinary journey in Canada, where he spent over a decade honing his craft before returning to Thailand. His latest venture, Nawa Thai Cuisine, received a Michelin Star and the Michelin Opening of the Year award. At Samlor, he brings a refined take on Thai street food, while Kwann explores the smoky, fire-driven flavors of Thai grilling traditions. He earned his first Michelin star at 80/20 Bangkok.
