A Bite of History Sushi may be trendy now, but it's got ancient roots. It started as a way to preserve fish in fermented rice somewhere in Southeast Asia. But it was in Japan where sushi evolved into the fresh, flavorful art form we know today. By the Edo period, sushi became fast food—yes, you read that right! Street vendors sold nigiri (a slice of fish over vinegared rice) to busy folks in Tokyo, and just like that, sushi became the star of Japanese cuisine.
Fast forward to today, and sushi has gone global. From high-end omakase counters to cozy delivery boxes, sushi has a special spot in foodie hearts everywhere.
