Common Rajasthani pickles include: Aam ka Achaar (Mango Pickle): Made with raw mangoes, mustard seeds, fennel, and asafoetida. Ker-Sangri Achaar: A mix of dried wild berries (ker) and beans (sangri), native to Rajasthan's desert regions. Lemon Pickle: Fermented with salt and turmeric, known for its tangy-sour flavor. Chili Pickle: Whole green chilies stuffed with spices like fenugreek and mustard. Each of these pickles is deeply ingrained in local food customs, often served alongside staples like bajra roti, dal, and curd.
