Yellow Potato Curry With Cumin

600g or 4 medium potatoes potatoes, cut into cubes 1 onion, finely sliced 2 tbs light olive oil or 2 tsp ghee 1 tsp cumin ½ tsp turmeric 1 sprig curry leaves 2 tbs chopped mint leaves chopped a few fresh coriander leaves 3 green chillies, slit in halves ½ cup or 125ml water, you may need more salt

Heat the oil and add the cumin seeds.

Once the cumin seeds start to burst, add the onion, curry leaves and chillies.
