CUSTOMISING YOUR CASK

It's 8 pm and -2 degrees Celsius in Dumfries and Galloway, Lowlands of Scotland, as I make my way to the warehouse to enjoy a dram of whisky peacefully sleeping in the warehouse. Its -1 degree Celsius inside the warehouse, as we work our way to open the Cask of a 1987 Single Malt Single Cask whisky. I am overwhelmed by the number of casks surrounding me, each holding a precious spirit, whiskies across age, style, cask and taste. I nose a 1987 whisky; it is mellow, elegant, the nose of rich fruits, touch of oak, sherry sweetness and naughty, twinkling aromas, draw deep in my nose. The taste: Sublime, confident with the assurance that comes with a 38-years-old malt. I loved the whisky, each whiff and drop, after all it was my own cask.
