Mexican Hash Brown Pizzas

MAKES 8

PREP & COOK 40 MINS

• 8 frozen hash browns

• 425g can Mexe Beans (see Tip)

• 125g can corn kernels, drained

• 1 small green capsicum, finely chopped

• ¾ cup Mexican blend shredded cheese

1 Place hash browns in a single layer on a large oven tray.

2 Cook in a 220C preheated oven for about 25 mins, turning halfway through, until golden. Remove from oven.

3 Meanwhile, combine beans and corn in a small bowl.

4 Spread 1 heaped tbsp of bean and corn mix evenly over each hash brown. Sprinkle with capsicum and cheese. Return to oven.

5 Cook for about 5 mins, or until cheese is melted and lightly browned. Remove.

6 Serve warm.
