Here's an ingenious summertime use for your trusty pie maker

Easy-as-pie ice-cream sandwiches

MAKES 8

INGREDIENTS

1 litre salted caramel ice cream, softened

200g chocolate-covered honeycomb pieces, such as a Crunchie bar, chopped coarsely, plus extra pieces, crumbled, to decorate

450g ready-to-bake frozen choc chip cookie dough (see Tips)

200g dark chocolate (70% cocoa), chopped coarsely

2 tsp vegetable oil

1 Grease a 23cm square cake pan. Line base and sides, leaving 5cm above the sides.
