Sweet potatoes can do way more than the usual casseroles

CROWD CONTROL Divide the potatoes between two pans for maximum crispiness.

Kale-Sweet Potato Salad

Peel and cut 2 large sweet potatoes into ¾-inch wedges; toss with 1 Tbsp. olive oil, ½ tsp. salt, and ⅛ tsp. ground cinnamon in a large bowl. Divide between 2 large rimmed baking sheets. Bake at 450°F, turning potatoes after 15 minutes, until crisp and golden brown, about 25 minutes. Whisk together 3 Tbsp. olive oil, 2 Tbsp. cider vinegar, 1 tsp. salt, ¼ tsp. cayenne pepper, and ⅛ tsp. ground cinnamon in a small bowl. Gently toss cooked sweet potatoes, 1 thinly sliced Honeycrisp apple, 1 (4-oz.) pkg. baby kale, ½ cup dried cranberries, and dressing in a large bowl. Top with ½ cup toasted sliced almonds.
