Chestnut Cake with Chestnut Whipped Cream

SERVES 8 TO 10

Baking spray

6 Tbsp. unsalted butter, melted and cooled

Sweetened Chestnut Puree (recipe below), divided

3 large eggs, at room temperature

½ cup granulated sugar

1 cup all-purpose flour

2½ tsp. baking powder

¾ tsp. ground cinnamon

½ tsp. kosher salt

¾ cup heavy whipping cream

1 Tbsp. powdered sugar, plus more for dusting

1. Preheat oven to 350°F. Coat a 9-inch round cake pan with baking spray, and line bottom with parchment paper; set aside.

2. Beat together butter and 1¼ cups Sweetened Chestnut Puree in a large bowl with an electric mixer on medium speed until incorporated, about 1 minute. Add eggs and granulated sugar; beat on medium speed until smooth, about 30 seconds. Set aside.
