BBQ CHICKEN SWEET POTATO NACHOS

1. Heat oven to 400°F. Line rimmed baking sheet with parchment paper.
2. In small bowl, whisk together honey, 2 Tbsp lime juice and 1/4 tsp salt to dissolve. Add jalapeño and onion and toss to combine; let sit, tossing occasionally, until ready to use.
3. In medium bowl, toss shredded chicken and barbecue sauce to coat.
4. Arrange sweet potato chips on prepared sheet in single layer; sprinkle with 1 cup cheese, then chicken, then remaining 1/2 cup cheese. Bake until cheese is melted and chicken is warm, 15 to 18 min.
5. Meanwhile, in small bowl, combine sour cream, lime zest and remaining 2 tsp lime juice.
6. Top nachos with pickled red onion and jalapeño. Drizzle with sour cream sauce and sprinkle with cilantro.

QUINOA-STUFFED HONEYNUT SQUASH
Active 40 min. | Total 1 hr. 5 min.
1. Place rimmed baking sheet in bottom third of oven and heat oven to 450°F.
2. In medium saucepan, bring 1 cup water to a boil. Stir in quinoa and 1/4 tsp salt and return to a boil. Reduce heat and gently simmer, covered, 10 min. Remove from heat and let sit, covered, 5 min. Fluff with fork, transfer to medium bowl and let cool to room temp.
