Simple Saucy Potatoes

These rich and creamy potatoes are simple to prepare for potlucks. The saucy side dish always gets rave reviews wherever I take it.

Prep: 10 min. • Cook: 4 hours

Makes: 12 servings

image4 cans (14½ oz. each) sliced potatoes, drained

2 cans (10¾ oz. each) condensed cream of celery soup, undiluted

2 cups sour cream

10 bacon strips, cooked and crumbled, divided

6 green onions, thinly sliced

Optional: Chopped chives and coarse cracked pepper

Place potatoes in a 3-qt. slow cooker. Combine the next 4 ingredients, reserving ⅓ cup bacon crumbles; pour mixture over potatoes and mix well. Cover and cook on high for 4-5 hours. Top with reserved bacon and, if desired, chopped chives and coarse cracked pepper.

After trying many variations of this old standby, I decided to give it a little extra kick. The crunchy texture, cheesy goodness and bacon make it a hit at any holiday get-together.

Prep: 20 min. • Cook: 5½ hours

Makes: 10 servings

2 pkg. (16 oz. each) frozen cut green beans, thawed

2 cans (10¾ oz. each) condensed cream of mushroom soup, undiluted

1 can (8 oz.) sliced water chestnuts, drained

1 cup 2% milk

6 bacon strips, cooked and crumbled

1 tsp. pepper

⅛ tsp. paprika

4 oz. cubed Velveeta

1 can (2.8 oz.) french-fried onions
