This time we nudged them to share their absolute favourite ingredient and how they like to build up culinary stories with it. "These days, I find myself gravitating more and more towards Millets. They have become a staple in my kitchen not just because they are wholesome but because they offer such a beautiful balance of nutrition, versatility, and sustainability. I use them almost every day, whether in cookies, traditional Indian desserts, soft cakes, or even artisanal breads. Their subtle earthy flavour pairs wonderfully with both sweet and savoury profiles, which makes them incredibly rewarding to work with."

"One of my absolute favourites is the 'Ragi Clarified Butter Cookie'. It's made with finely ground ragi flour and homemade ghee both of which elevate the humble cookie into something deeply comforting and nostalgic. The ragi lends a delicate nuttiness and beautiful texture, while the ghee gives it a melt-in-the-mouth richness."
