Creamy mushroom pasta

SERVES 4

Ingredients

2 tbsp olive oil

1 tbsp butter

1 medium onion, finely chopped

250g mushrooms, sliced

2 small garlic cloves, crushed

250ml double cream

1 lemon, zest only

200g Parmesan, grated, plus extra, to serve

Sea salt and freshly milled black pepper

400g penne pasta

A few sprigs of thyme

1. Heat the oil and butter in a medium saucepan. Fry the onion over a low heat for 5 minutes, until translucent.

2. Add the mushrooms and garlic and cook gently for 10 minutes.

3. Add the double cream and bring to a gentle simmer, then add the lemon zest and Parmesan.

4. Season with sea salt and freshly ground pepper. Meanwhile, cook the pasta following the pack instructions. Reserve a few tablespoons of the pasta water.
