Tortilla bread pizza MAKES 4

INGREDIENTS

4 small whole wheat tortillas

1 small garlic clove, halved

8 tbsp passata

100g mozzarella, sliced

250g mixed baby tomatoes, halved

Sea salt and freshly milled black pepper

A few drops of balsamic glaze (optional)

A few basil leaves, to serve

METHOD

Heat the oven to 200°C/180°C fan/gas mark 6. Put the tortillas onto a large baking sheet.

Rub the cut side of the garlic all over the tortillas, then spoon over 2 tbsp of passata per pizza, leaving a 1cm border around the edges.

Scatter with the mozzarella and baby tomatoes, and season with sea salt and freshly milled black pepper.

Bake for 6-8 minutes until the edges of the tortillas are crisp and golden, and the cheese has melted and is bubbling.
