VEGETARIAN TAQUITOS

Serves 4 

2 poblano chili peppers 

2 cups ricotta cheese

8 corn tortillas

 1⁄4 cup extra-virgin olive oil

1. Roast the poblanos over an open flame, on the grill or in the oven until they are charred all over. Place the po– blanos in a bowl, cover with plastic wrap and let them steam 10 min. When cool enough to handle, remove skin, seeds and stems and dice remaining flesh.

2. Stir the poblanos into the ricotta, season the mixture with salt and set aside.
