BAKED GREEK MEATBALLS

SERVES 4 PREP 10 MINS COOK 30 MINS

500g lamb mince

• 1 cup fresh breadcrumbs

• ¼ cup finely chopped parsley

• 1 small red onion, chopped finely

• 2 tbsp chopped oregano leaves

• 1 tbsp finely chopped mint leaves

• 1 egg

• 4 garlic cloves, crushed

• 2 tbsp olive oil

• 2 x 400g cans diced tomatoes

• 200g feta, crumbled

• grilled flatbread, lemon wedges, to serve

1 Preheat oven to 180°C.

2 In a large bowl, combine mince, onion, breadcrumbs, herbs, egg and garlic. Season and mix well. Shape 2 tbsp of the mixture into balls.

3 In a large ovenproof frying pan, heat oil on medium. Cook meatballs in 2 batches, 3-4 mins each, until browned all over. Return all meatballs to pan with diced tomatoes and bring to the boil.
