Tart I use a cast-iron frying pan that no longer has its wooden handle after a careless accident on a campfire in the garden one night. But basically what you need is a 10-inch (or so) round cake tin that won’t leak and has a good heavy bottom. Now, these are the ingredients you’ll need:

2lb rhubarb 

2 inches of grated fresh ginger 

8oz sugar, depending on taste 

A little lemon juice 

11oz self-raising flour (if using wholewheat flour, then you’ll need to use more milk)

1 teaspoon of baking powder 

Half a teaspoon of freshly grated nutmeg 

2oz butter 

1oz golden caster sugar

A pinch of salt

A large egg

175ml full-fat milk

Some demerara sugar
