My Big Fat Greek Feast

Eating like a greek is all about sharing a meal from different delicious plates and bowls. The best part is that greek food is naturally low in carbohydrates and nutritious to boot!
SERVES 6
MAKES 6 INDIVIDUAL MOUSSAKAS OR 1 LARGE MOUSSAKAKEEP ON TRACK per serving

FOR THE BEEF MINCE
3 tbsp extra-virgin olive oil
1 onion, peeled and finely chopped
2 celery stalks, finely chopped
2 garlic cloves, finely chopped
½ tsp nutmeg
1 cinnamon stick
3 cloves
1 tbsp tomato paste
1 tsp dried oregano
1kg beef mince
400g tin whole peeled tomatoes
FOR THE EGGPLANT LAYER
4 medium eggplants
2 tsp salt
3 tbsp extra-virgin olive oil
FOR THE TOPPING
250ml full cream yoghurt
100g feta, crumbled
3 egg yolks
½ tsp salt

GREEK FOOD IS AUTHENTIC AND UNPRETENTIOUS AND SHOULD ALWAYS BE SHARED WITH FAMILY AND FRIENDS.
1. Heat the olive oil in a large saucepan over medium-high heat.
2. Fry the onion and celery for 3–4 minutes. Add the garlic, nutmeg, cinnamon stick, cloves, tomato paste, and oregano and fry for 2 minutes.
3. Add the beef mince in batches and brown each batch before adding the next lot.
4. Add the tomatoes, squash them with a fork, and cook on a low heat for 15 minutes while you make the other layers.
