Mutton Curry With Delicious Coconut Rice

1 Peel and thinly slice the onions, quarter the peeled potatoes, peel and chop the garlic, grate the peeled ginger, cut the mutton or lamb into generous cubes, depip and chop the chillies, hand-tear the dhania leaves, and rip the curry leaves off their stalks. Select a suitable saucepan and bring the canola or sunflower oil up to medium heat. Add the grated ginger, chopped garlic, chillies, curry leaves and thinly sliced onions. Stir from time to time to avoid adhesions and profoundly undesirable subsequent burning, and let the contents fry gently until the onions are soft and translucent. Add the cubed mutton or lamb and
