Mutton Curry With Delicious Coconut Rice

In a normal curry and rice dish, the rice is the poor relation. Cook with this combination of flavours to give it the status it deserves.

1 Peel and thinly slice the onions, quarter the peeled potatoes, peel and chop the garlic, grate the peeled ginger, cut the mutton or lamb into generous cubes, depip and chop the chillies, hand-tear the dhania leaves, and rip the curry leaves off their stalks.
