A never-fail meringue makes this pie recipe. Thanks to a little cornstarch, the fluffy topper stays stable atop the tart filling. No matter how you swoop, spoon or swirl it, this pie is citrusy perfection.

Classic Lemon Meringue Pie

Makes: 8 servings

  • 1/3 cups all-purpose flour
  • 1/2 tsp. salt
  • 1/2 cup shortening
  • 1 to 3 Tbsp. cold water
  • FILLING
  • 11/4 cups sugar
  • 1/4 cup cornstarch
  • 3 Tbsp. all-purpose flour
  • 1/4 tsp. salt
  • 1/2 cups water
  • 3 large egg yolks, lightly beaten
  • 2 Tbsp. butter
  • 11/2 tsp. grated lemon zest
  • 1/3 cup fresh lemon juice

MERINGUE

  • 1/2 cup sugar, divided
  • 1 Tbsp. cornstarch
