Use up festive leftover odds and ends to make these tasty ideas
Pigs in blankets tartiflette
Tartiflette is a hearty alpine dish made with cheese melted through layers of onion and potato.
SERVES 6
PREP 25 mins COOK 35 mins
* Oil, for frying
* 288g pack pigs in blankets
* 2 onions, finely sliced
* 3 garlic cloves, finely chopped
* 200ml white wine
* 500g cooked roast potatoes
* 150g cooked roast parsnips
* Small handful parsley, finely chopped
* 350g creamy cheese, such as Reblochon, Taleggio, Camembert or Brie, cut into 5mm-thick slices
* 200g pot crème fraiche
* Salad, to serve
1 Heat the oven to 160C Fan/Gas 4. In a large casserole dish, fry the pigs in blankets until golden brown.
2 Add the onions and fry for 15 mins until golden; add a splash of oil if they start looking dry. Mix in the garlic and fry for around 2 mins, then deglaze with the wine. When the wine has almost evaporated, remove from the heat.
3 Meanwhile, slice the potatoes and parsnips into 5mm-thick slices. Add them to the dish with the parsley and carefully fold everything together.
4 Nestle the cheese slices on top. Stir the crème fraiche then pour this over. Bake for 35 mins, then serve with a salad.

SERVES 4
PREP 15 mins COOK 15-20 mins
* 1tbsp olive oil
* 1 onion, chopped
* 500g cooked turkey, finely chopped
* Zest 1 lemon
* 1tsp dried oregano
* 700g jar tomato passata
* Splash red wine vinegar
* 300g pack fresh lasagne (you'll need 10-12 sheets)
