KIDS COOK-UP

CHEESY VEGEMITE SCROLLS

SERVES 8 PREP 15 MINS COOK 20 MINS

• 2 1/2 cups self-raising flour

• 50g cold butter, chopped

• 1-11/4 cups milk, extra 1 tbsp milk

• 2 tbsp Vegemite

• 2 cups grated tasty cheese

1 Place flour in a large bowl. Rub in butter with your fingertips to form fine crumbs. Make a well in the centre. Then pour in enough milk to form a soft but not sticky dough, using a table knife to gently stir until mixture comes together.

2 Turn dough onto a lightly floured bench. Gently knead until smooth (don’t over- knead). Roll out dough to a 25cm x 35cm rectangle. Spread with Vegemite. Sprinkle with 11/2 cups of the cheese. Roll up dough firmly from one long side to form a log. Cut into eight even-sized pieces.

3 Place 3cm apart, cut-side up, on a greased, large oven tray. Brush with extra milk. Sprinkle with remaining cheese.
