The mad, humid city of Bangkok, famously called “the queen of 3am”, doesn’t truly come alive until sunset. When the day cools off, the open-air night markets take over the streets with antiques, trinkets, secondhand clothes, silks... and some of the greatest quickfire meals you'll have in your life. “Late at night, you will find folks at khao tom shops, selling Teochew-style boiled rice with condiments, and Isan shops, selling laap, grilled meats and som tam paired with beer. Or, if you're really with the locals, then you're drinking Regency, a Thai brandy, topped with water or soda.” Kader's go-to spots are Siah Duck Noodle in the Rama IV area and Nongkhai Jim Jum in Ekamai for grilled pork udder. The swankiest place to sleep off a food coma is the new Aman hotel, which borders the picturesque, 110-year-old Nai Lert Park Heritage Home. It's got a pool to end all city-hotel pools, tucked among the skyscrapers, and a three-storey spa—where you might need to book a Thai massage after crisscrossing the city to hit Kader's recs.
