Chocolate Kiss Cookies

1. Preheat oven to 375°F. Line a large rimmed baking sheet with parchment paper.
2. Beat butter, brown sugar, and 3/4 cup of the granulated sugar with a stand mixer fitted with a paddle attachment (or an electric hand mixer) on medium speed until fluffy, about 2 minutes.3. Add egg, half-and-half, and vanilla; beat on medium-high speed until fully combined and fluffy, about 1 minute.
