No. 1 Sweet potato & chickpea mash

PREP + COOK TIME 30 MINUTES SERVES 4

Peel and coarsely chop 1kg orange sweet potatoes. Place in a medium saucepan with enough cold water to just cover. Boil over medium heat for 15 minutes or until sweet potato is tender; drain. Add a drained and rinsed 400g can of chickpeas during the last 5 minutes of cooking time to heat through.

Return sweet potato mixture to pan, then mash until smooth (or use a potato ricer or mouli). Add 2 tablespoons garlic-infused olive oil, 1 tablespoon tahini, and 1 tablespoon lemon juice; fold in gently until mash is smooth. Season to taste.
