How do we know that dinosaurs weren't bright pink or rainbow-coloured?

When you think of a dinosaur, do you imagine a bottle-green, tubby T. Rex? Or something that looks like a giant scaly lizard? Famous films such as Toy Story and Jurassic Park give dinosaurs a certain look – and the more modern the image, the more flamboyant the look. But how much do we really know about what these ancient beasts looked like when they were alive, and how do palaeontologists (scientists who study the remains of past life) figure it out from some fossilised bones?
