Pumpkin, Feta and Caramelised Onion Pizza

MAKES 2
PREP & COOK 25 MINS

  • 500g packet diced pumpkin

  • 300g packet (2) pizza base (see Tip)

  • 1/3 cup pizza sauce

  • 1/3 cup caramelised onion

  • 1/3 cup roasted capsicum strips

  • 80g Greek feta, crumbled

  • 1/3 cup grated mozzarella

  • Baby rocket leaves, to serve

1 Lightly spray a 7-litre air fryer basket with olive oil. Arrange pumpkin in basket. Spray pumpkin with olive oil. Season with salt and pepper. Air-fry on 180C for 8-10 mins, or until just tender. Remove pumpkin and set aside.

2 Place one pizza base into a 7-litre air fryer basket. Air-fry on 200C for 2 mins.

3 Spread pizza base with half the sauce. Top with half each of the onion, pumpkin, capsicum, feta and mozzarella. Air fry on 200C for 5 mins, until cheese is melted. Repeat with remaining ingredients to make another pizza.

4 Serve pizzas topped with rocket leaves.
