Posh steak and chips
SERVES 2
Served with a cheat's Béarnaise sauce, this pub classic is a winner for date night.

YOU WILL NEED

260g skinny quick oven-cook French fries

2 thin-cut sirloin steaks (about 150g each)

1tbsp olive oil

2tsp finely chopped rosemary

Zest ½ lemon

1tbsp flaked sea salt

Watercress or salad leaves, to serve

For the sauce:

4tbsp whole egg mayonnaise

2tbsp full-fat crème fraiche

2tsp wholegrain mustard

½tsp white wine vinegar

Squeeze of lemon juice

1-2tbsp finely chopped fresh tarragon leaves

HOW TO DO IT

1 Heat the oven and cook the French fries according to the pack instructions.

2 Meanwhile, heat a heavy-based frying pan over a medium-high heat. Pat the steaks dry with some kitchen paper, then brush them with the olive oil. Fry for 2-3 mins on each side or until caramelised and cooked to your liking. Set aside to rest for around 5 mins.

3 Mix all of the Béarnaise sauce ingredients together in a saucepan, season with salt and pepper, and gently warm through.
