Spaghetti and meatballs

SERVES 2

A classic meal that's hard to beat.

YOU WILL NEED

1tbsp olive oil, for frying 200g spaghetti

For the meatballs:

30g fresh breadcrumbs

2tbsp skimmed milk

2tbsp finely grated Parmesan cheese, plus extra to serve

250g minced beef, 15% fat

½ onion, finely chopped

1 garlic clove, crushed

2tbsp finely chopped parsley

For the sauce:

½ onion, chopped

1 garlic clove, crushed Pinch chilli flakes

400g tin cherry tomatoes

1tbsp sun-dried tomato puree Pinch dried Italian herbs

HOW TO DO IT

1 To make the meatballs, mix the To make the meatball mixtare bowl and set aside to soak for a few mins, until the bread is fully hydrated. Add the remaining meatball ingredients and a good pinch of salt, then mix well with clean hands. Roll the mixture into 8-10 balls, and chill for 30 mins.

2 Heat the oil in a large frying pan and fry the meatballs until browned all over, then set aside, reserving the fat in the pan.
