The air fryer makes cooking so simple. From healthier versions of fried favourites to baked treats, these easy recipes are made to enjoy!
Muesli bars
MAKES 12 PREP + COOK TIME I HOUR
1 Process 1 cup (90g) oats until the consistency of desiccated coconut. Add sunflower seeds and pepitas; pulse briefly until a few are coarsely chopped. Transfer mixture to a large bowl. Process apricots, chia seeds and the boiling water until finely chopped; add to the bowl with coconut.2 Stir butter, sugar, honey and cinnamon in a medium saucepan over low heat until sugar dissolves and mixture is smooth; stir into oat mixture until combined, then stir in remaining oats.
3 Remove the basket from the pan of a 5.3-litre air fryer and place on a sheet of baking paper; trace around the base. Cut out shape 2cm larger than the marked tracing. Grease basket and line with the paper cut-out.
4 Press oat mixture very firmly over the paper; use the base of a glass or an offset spatula to compact the mixture. Insert the basket back into the air fryer pan; at 140°C, cook for 40 minutes.5 Remove the basket from the air fryer pan and place on a wire rack to cool completely. Using the paper as an aid, lift the slice from the basket and transfer to a board; cut into 12 bars.
Free-form banana pecan muffins
MAKES 9 PREP COOK TIME 35 MINUTES
1 Triple layer 27 paper muffin cases to make nine thick cases.2 Combine flour and sugar in a large bowl. Whisk egg, vanilla, oil and milk in a medium bowl; add to dry ingredients, stirring until just combined. Fold banana into mixture until just combined. Divide mixture evenly among muffin cases.
