Cameron's corn salad

Actor Cameron Diaz loves to eat healthily, but knows that doesn't have to mean scrimping on flavour. Her roasted corn and fresh pea salad with feta cheese and a champagne orange and garlic vinaigrette is a great accompaniment or a summer snack. Top tip - if you can't find the champagne vinegar that Cameron, 52, uses, substitute it with white wine vinegar, which works well.
- Oil, for frying
- 1 ear of corn, corn removed
- Pinch of kosher salt
- Handful sugar snap peas
- Feta cheese, crumbled
For the vinaigrette:
- ½ orange
- A splash of champagne vinegar
- 1 garlic clove
- Splash of olive oil
- Pinch of Maldon sea salt
1 To make the dressing, juice the orange before adding to the champagne vinegar and olive oil in a small bowll. Grate the garlic clove and add a pinch of Maldon sea salt to the bowl before whisking until combined and emulsified.
2 Heat some oil in a pan and fry the corn with a pinch of kosher salt.
3 While that’s cooking, slice the sugar-snap peas finely and add to a bowl.
4 When the corn is crisp and golden, take off the heat and mix into the sugar-snaps.
5 Add the vinaigrette and top with the crumbled feta and a pinch of Maldon salt.
