Rosemary is one of the most useful evergreen herbs for the winter garden.

HERB OF THE MONTH ROSEMARY

With its strongly aromatic, needle-like leaves, it adds flavour to countless dishes, from roasted meats and potatoes to breads and bakes. A few sprigs in a stew or soup will lend depth and warmth during the colder months. Unlike many herbs that die back in winter, rosemary keeps on giving, making it a year-round staple.

GETTING STARTED

Rosemary is best grown in a sunny, sheltered spot with free-draining soil - it dislikes sitting in waterlogged ground. In heavy soils, grow it in a large container with added grit. Plants are slow to establish but, once settled, can live for many years. Trim lightly after flowering in summer to keep bushes compact and prevent them becoming woody.

In very cold areas rosemary may suffer die-back, particularly if the soil is wet as well as frosty. Protect pot-grown plants by moving them against a wall or covering with fleece in prolonged cold spells.
