HERB OF THE MONTH ROSEMARY
Kitchen Garden
|November 2025
Rosemary is one of the most useful evergreen herbs for the winter garden.
-
With its strongly aromatic, needle-like leaves, it adds flavour to countless dishes, from roasted meats and potatoes to breads and bakes. A few sprigs in a stew or soup will lend depth and warmth during the colder months. Unlike many herbs that die back in winter, rosemary keeps on giving, making it a year-round staple.
GETTING STARTED
Rosemary is best grown in a sunny, sheltered spot with free-draining soil - it dislikes sitting in waterlogged ground. In heavy soils, grow it in a large container with added grit. Plants are slow to establish but, once settled, can live for many years. Trim lightly after flowering in summer to keep bushes compact and prevent them becoming woody.
In very cold areas rosemary may suffer die-back, particularly if the soil is wet as well as frosty. Protect pot-grown plants by moving them against a wall or covering with fleece in prolonged cold spells.

LATE-SEASON APPLES
At this time of year, many orchards still have plenty to offer. Late-season apples are often overlooked but these varieties ripen slowly, developing rich flavours, and have excellent keeping qualities. Some are sharp and refreshing, perfect for cooking or balancing cider blends, while others mellow in storage to become sweet, aromatic and complex. PICKLE PERFECTION
I wondered if our family recipe, Auntie Annie's piccalilli, might be of interest. It's a delicious way to use surplus marrows and courgettes. Many people think they dislike piccalilli because they've only tried the shop stuff - this changes minds! Auntie Annie made hers for decades. The recipe likely dates to the 1890s and keeps well at room temperature — our current jar was made in 2018!
