Take a pack of PUFF PASTRY

Green chilli cheese swirl

An impressive spiral stuffed with cheese and potato.

SERVES 8

PREP 25 mins COOK 30-40 mins

*350g tinned or leftover boiled potatoes, drained

*100g Cheddar, grated

*100g mozzarella, torn or grated

*100g ricotta

*1 red onion, finely chopped

*2tsp cumin seeds

*2 green chillies, finely chopped

*10g fresh coriander, roughly chopped

*2 eggs

*320g sheet puff pastry

1 Heat the oven to 180C Fan/Gas 6. In a bowl, crush the potatoes with the back of a fork. Mix in the Cheddar, mozzarella, ricotta, red onion, 1tsp cumin seeds, the chillies and coriander. Crack in 1 egg and mix again; season generously.

2 Unroll the pastry and cut it in half lengthways into 2 long strips. Put half the potato mixture along the middle of each strip in a sausage shape. With 1 strip, lift 1 side of the pastry up and over the filling. Beat the egg and brush along the edge, lift the other side and press together to seal. Repeat with the other strip.
