Low & slow ONE POTS

Bean and root veg casserole

This spiced veggie stew will warm you from the inside.

SERVES 4

PREP 20 mins, plus soaking the beans overnight COOK 1 hr 35 mins

* 1tbsp vegetable oil

* 1 onion, chopped

* 3 garlic cloves, crushed

* ½ red chilli, seeds removed, finely chopped

* 2 star anise

* 1 cinnamon stick

* 175g dried cannellini beans, soaked overnight

* 300ml vegetable stock

* 3 sprigs thyme

* 100g dried apricots, roughly chopped

* 100g potatoes, peeled and cut into chunks

* 300g sweet potatoes, peeled and cut into chunks

* 350g butternut squash, peeled and cut into chunks

* 1tsp rose harissa (or use regular harissa paste)

* Large handful parsley, finely chopped

1 Heat the oil in a large casserole over medium heat. Mix in the onion, cooking for 10 mins until softened and browned. Add the garlic, chilli, star anise and cinnamon, and cook for 1 min.
