Apple and berry slice

SERVES 16

This is a fluffy, cake-style traybake with a gooey, fruity centre and crumbly top - perfect for a packed lunch.

YOU WILL NEED

2 Granny Smith apples, peeled, cored and finely sliced

6tbsp berry compote

10g flaked almonds

3tbsp icing sugar

For the cake:

200g butter, softened

150g soft light brown sugar

100g soured cream

1 medium free-range egg

1tsp vanilla extract

½tbsp ground ginger

1tsp cinnamon

250g plain flour

1tsp baking powder

You will need:

20 x 25cm baking tin, base and sides lined

HOW TO DO IT

1 Heat the oven to 160C Fan. Put the butter and light brown sugar in a food processor and whizz until smooth. Scrape down the sides and add the remaining cake mix ingredients, then whizz again until well combined.

2 Spread two-thirds of the cake mixture over the base of the tin. Spread over the apple and berry compote, then scatter over the remaining cake mix, covering most of the apple (a few gaps are fine).

3 Scatter over the flaked almonds, then bake for 45 mins. Leave to cool in the tin.
